Quick Cassoulet Meats And Beans |

This is my variation of the French dish of beans and mixed meats.. it's a good way to use some leftover meats. Just cut the leftovers into cubes and throw into the freezer. or you can start fresh.. Ingredients:
3 cans white beans - navy beans (or cook dry beans) |
4 tbsp. olive oil |
2 large onions, chopped |
3 cloves of garlic, minced |
4 slices of bacon, cut into pieces |
3 thick pork chops, cooked and cut into cubes or leftover pork roast |
2 boneless chicken breasts- cooked , cut into cubes |
3 lamb steaks (optional) cooked, and cut into cubes ( i skip this) |
1 lb hot italian sausage, cooked and cut into slices (i use more!) |
1/2 - 1 teasp. thyme |
parsley - approx a handful |
bay leaf |
salt and pepper to taste |
1 8 oz. can of tomato sauce |
1/4 cup dry red wine (optional) |
beef broth |
bread crumbs- regular or gluten free |
Directions:
1. Drain beans and place in a large casserole dish 2. heat oil in a frying pan and saute onion and garlic until soft but not brown 3. add to the beans along with the spices. stir 4. fry bacon until almost done.. add to the beans 5. brown the pork chops, chicken, and lamb in the bacon fat . cut into cubes 6. add to the beans 7. prick sausage and put in the frying pan with some water.. cook until done. cut into slices and add to the beans 8. mix the bean and meat mixture gently 9. pour over mixture the tomato sauce, wine, and enough beef broth to just cover the mixture. 10. bake at 350'F for approx 45 mins or until bubbly 11. sprinkle the top with bread crumbs and bake for 5 - 10 mins more |
