Another unique recipe from my mom's Black Box. A garlic-spiked quickbread is baked until nice and crusty in a round casserole dish. The result is like Irish Soda Bread in appearance. Ingredients:
5 tbsp salted butter |
4 cloves garlic, minced |
2 cups flour |
1 1/2 cups whole wheat flour |
4 tsp baking powder |
1 egg |
1 1/2 cups nonfat milk |
Directions:
1. Preheat oven to 350F. Lightly grease a 2-qt casserole dish and set aside. 2. Melt 1 tbsp butter in a small pan. 3. Add garlic and cook gently 3 minutes, do not let it brown. Set aside. 4. Blend all dry ingredients in a large bowl. 5. Cut in 3 tbsp butter to resemble crumbs. 6. Beat together egg, milk and the garlic butter, add to the dry mix and blend well. 7. Knead on a floured board 10-20 minutes, until not sticky. 8. Shape bread into a round and place in the casserole. 9. Slash the top of the round 1-2 times. 10. Melt the final tablespoon of butter and brush the loaf generously. 11. Bake 1 hour, then cool in the pan 10 minutes before turning out onto a rack. |
