Keep a batch of this Master Mix handy & the following recipes can be baked in a flash. What could be better than homemade from start to finish Ingredients:

9 cups sifted all-purpose flour |
1 - 1 1/2 tblspns salt |
4 tblspns baking powder |
2 cups shortening |
combine flour, salt & baking powder. |
sift into a very large bowl |
cut in shortening with a pastry blender until the mixture resembles course cornmeal. |
store in covered container in kitchen cupboard |
to use in the following recipes, spoon the mix lightly into measuring cup, taking care not to pack down. |
Directions:
1. BLUEBERRY MUFFINS:- 2. 3 cups Master Mix 3. 1/2 cup sugar 4. 1 cup milk 5. 1 egg 6. 1 cup fresh or frozen blueberries. 7. Blend Mix & sugar. Combine milk & egg & add to mix. Stir until just mixed. Fold in blueberries. Use blueberries in frozen state if not using fresh. Do not over mix.. 8. Fill greased muffin tins two thirds full. Bake at 400 degreesF for 20 - 22 mins. Makes 12 muffins. 9. BANANA BREAD:- 10. 2 cups Master Mix 11. 1 cup sugar 12. 1/2 tsp baking soda 13. 2 large bananas, peeled & mashed 14. 1/4 cup walnuts 15. 2 eggs 16. 1/3 cup buttermilk or 1/3 cup milk + 1 tsp vinegar 17. Combine Mix, sugar & soda. Combine bananas, walnuts, eggs & buttermilk & add to dry ingredients. Blend thoroughly. Turn into a well greased 9 x 5 loaf pan. Bake at 350 degreesF for 40 - 45 mins. Storage improves flavor & texture. 18. FRUIT FILLED COFFEE CAKE:- 19. 2 cups Master Mix 20. 3 Tblspns sugar 21. 1 egg - beaten 22. 1/2 cup milk 23. 2/3 cup marmalade, apricot or berry jam 24. 1/4 cup brown sugar 25. 1/2 cup raisins 26. 1/4 tsp cinnamon 27. Combine Mix with sugar. Combine egg & milk. Add to dry ingredients & mix thoroughly. 28. Spread 1/2 of dough inbottom of well greased 8 layer cake pan 29. Spread marmalade or jam over top of dough in pan. Mix brown sugar, raisins & cinnamon & sprinkle on top of marmalade. Drop remaining dough by teaspoons around outer edge of pan. Bake at 350 degreesF for about 40 mins. 30. BAKING POWDER BICUITS:- 31. 3 cups Master Mix 32. 3/4 cup milk 33. Put Mix in bowl & make a well in center. Add milk & stir with fork (about 25 strokes). Turn onto lightly floured board. Knead well about 6 times. Roll or pat to 1/2 thickness. Cut into 2 rounds with floured cutter. Place on baking sheet. Bake at 450 degrees for about 15 mins. Yields 18 biscuits. 34. Variation:- 35. Cheese bicuits. - Add 2/3 cup grated cheese to dry ingredients before adding milk. |
