This cake is moist and loaded with blueberries. Ingredients:

1 cup sifted flour |
1 1/2 tsp baking powder |
dash of salt |
1/3 cup sugar |
1 egg |
1/2 cup milk |
1/3 cup oil |
1 tbsp lemon juice |
1 cup blueberries |
topping |
1/3 cup sugar |
1/4 cup flour |
dash of salt |
1/4 tsp cinnamon |
2 tbsp oil |
Directions:
1. Sift dry ingredients together. 2. Beat egg; add milk and oil, mixing well. 3. Pour into the flour mixture, and stir until smooth. 4. Put batter into an 8 square pan. 5. Add lemon juice to blueberries and then scatter them over the batter. 6. Mix all topping ingredients and sprinkle over the batter. 7. Bake at 375 degrees for 40 minutes. |
