Quick Black-Eyed Peas & Ham |

Quick version using canned beans. You could used turkey bacon or sausage too. Ingredients:
1 medium onion, chopped |
2 tablespoons vegetable oil |
2 (15 ounce) cans black-eyed peas, rinsed & drained |
1/4 cup cooked ham, diced |
1/4 cup teriyaki sauce |
1 teaspoon creole seasoning |
1 1/4 cups water |
hot cooked rice |
chopped tomato |
green onion |
Directions:
1. Saute chopped onion in hot oil over medium high heat 3 minutes. 2. Add peas & next 4 ingred. 3. Bring to boil; reduce heat and simmer 15minutes. 4. Stir occasionally. 5. Serve over rice w/ desired toppings. |
