quick low fat bean soup Ingredients:
2 (15 ounce) cans black beans |
3/4 cup diced onion |
1 jalapeno |
1 garlic clove, minced |
1 teaspoon cumin |
1 teaspoon vegetable oil |
1 cup low sodium chicken broth |
1 medium tomato, diced |
Directions:
1. saute onion, jalepeno and garlic in oil till fragrant. Add cumin and stir till fragrant. Add tomato. 2. add one can on black beans and 1/2 cup broth. 3. bring to simmer and let simmer till tomato starts to break down. 4. Puree 1/2 of soup in blender and return to pan add other can of black beans and heat through. 5. garnish with sour cream and avocado. |
