Here's a simple bean soup made with canned beans; no soaking the beans overnight. Ingredients:
ham bone and any meat scraps clinging to it |
2 tablespoons of oil |
2 medium onions, coarsely chopped |
3 stalks of celery, chopped |
1 green pepper, chopped |
2 cloves garlic, minced |
1 16oz can pinto beans |
1 16oz can black beans |
1 16oz can black-eyed peas |
1 16oz can great northern beans (or can use navy beans) |
1 16oz can red kidney beans |
1 can lentil soup (progresso) |
1 28oz can diced tomatoes |
4 to 6 cups of water or chicken stock |
juice of 1/2 lemon |
hot sauce |
1/2 teaspoon cumin |
1/2 teaspoon black pepper |
2 bay leaves |
pinch of ginger |
2 cups of real ham, cubed (not lunchmeat) |
Directions:
1. Saute chopped onions and peppers and celery in oil in LARGE stock pot; add garlic; 2. Add all beans (do not drain), soup, and tomatoes with all their juices, stirring to combine well; 3. Add water or stock to desired consistency; 4. Add lemon juice, spices, and hot sauce; 5. Simmer for one and a half hours; 6. Add cubed ham and simmer for another 30 minutes; 7. Remove ham bone and bay leaves before serving. |
