This is an old favourite from my Joy of Cooking cookbook. Ingredients:
1 3/4 cups all-purpose flour |
2 1/4 teaspoons baking powder |
1/2 teaspoon salt |
1/3 cup shortening |
2/3 cup sugar |
3/4 teaspoon grated lemon rind |
1 -2 beaten egg |
1 -1 1/4 cup ripe banana pulp |
1/2 cup broken nutmeats (optional) |
Directions:
1. Preheat oven to 350 degrees. 2. Sift flour, re-sift wih baking powder and salt. 3. Blend shortening, sugar until creamy and add lemon rind. 4. Beat in eggs and banana pulp. 5. Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth. 6. Fold in chopped nuts. 7. Place the batter in a greased bread pan. 8. Bake the bread for about 1 hour or until done. 9. Cool before slicing. |
