This is a fast way to make a savory hot potato casserole. People often can't guess what the sauce is! Ingredients:
4 cups frozen southern style hash brown potatoes (cubes) |
3/4 cup mayonnaise or 3/4 cup salad dressing |
1/2 cup yellow onion, minced |
6 ounces american cheese, diced |
1/2 teaspoon kosher salt (to taste) |
1/8 teaspoon black pepper (to taste) |
6 slices bacon, cooked crisp |
paprika, for dusting |
Directions:
1. Preheat oven to 350ºF. 2. Place hash browns in a microwaveable bowl, and microwave on high for 3 to 5 minutes, stirring once or twice, till defrosted and soft. 3. Stir in the mayo with a rubber spatula, till potato cubes are evenly coated. 4. Add onions, cheese cubes and seasonings. 5. Cut bacon into 1/2 inch pieces and add to potato mixture, stirring to distribute evenly. 6. Taste and adjust seasoning, if necessary. 7. Turn mixture into a buttered casserole. 8. Sprinkle liberally with paprika. 9. Bake for 25 to 30 minutes, until cheese is melted and top in golden. 10. For faster prep, use 2 teaspoons of dried minced onion and 1/3 cup jarred bacon bits, instead of the fresh onion and cooked bacon. |
