I wanted a recipe where I could incorporate some whole wheat benefits while keeping the flavor and texture of traditional waffles The mix is great to make ahead and keep in the fridge. I made some simple changes to a basic pancake recipe and got a hit. My family eats these with syrup, bananas and brown sugar and even ice cream and chocolate syrup. Enjoy! Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
1 tablespoon sugar or 1 tablespoon artificial sweetener |
1 1/2 cups milk |
1 teaspoon pure vanilla extract |
4 tablespoons vegetable oil |
2 large eggs, separated |
Directions:
1. Preheat waffle iron. 2. In a large mixing bowl, sift together the dry ingredients. Stir in milk, oil, vanilla and egg yolks until mixture is smooth and there are no lumps. 3. Using a separate bowl, whip the egg whites until peaks form. 4. Fold the egg whites into batter. 5. Spray the preheated waffle iron with non-stick cooking spray and pour about a 1/3 cup of mix onto the hot waffle iron. Cook until no more steam is released and waffles are golden. 6. Serve hot with fruit and fresh whipped cream. |
