Quick and Easy Tropical Coffee Cake |

1973 Bake off in Pillsbury contest. Ingredients:
1 1/2 cups pillsbury flour |
1 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
8 ounces plain yogurt |
1/2 cup oil |
2 eggs |
1/2 cup shredded coconut |
1/2 cup nuts |
1/3 cup sugar |
1 teaspoon cinnamon |
3/4 cup crushed pineapple, drained |
Directions:
1. Grease 9 in square cake pan. 2. Mix flour, 1 c sugar, baking powder, salt with oil, yogurt, and eggs. 3. In a separate bowl mix 1/3 c sugar, cinnamon, nuts sprinkle over batter. 4. Top with drained, crushed pineapple, mixed with coconut. 5. Bake 350 for 35-45 min and until toothpick comes out clean. |
