Quick and Easy Spanish Rice |

My girlfriend Sue shared this recipe and we have made it for years. It is my favorite 'lenten' go to dish as it goes well with any kind of seafood. Ingredients:
1 medium green pepper, diced |
1 small onion, diced |
1/4 cup butter |
2 cups white rice, cooked |
1 (10 3/4 ounce) can tomato soup |
Directions:
1. Melt buitter in a skillet and saute the onion and green pepper till softened. Mix with the rice and soup and pour into an oven safe baking dish. Bake at 350* for approximately 20-25 minutes until heated thorugh and slightly golden on top. |
