Quick and Easy Spanish Rice

My girlfriend Sue shared this recipe and we have made it for years. It is my favorite 'lenten' go to dish as it goes well with any kind of seafood.
Ingredients:
1 medium green pepper, diced
1 small onion, diced
1/4 cup butter
2 cups white rice, cooked
1 (10 3/4 ounce) can tomato soup
Directions:
1. Melt buitter in a skillet and saute the onion and green pepper till softened. Mix with the rice and soup and pour into an oven safe baking dish. Bake at 350* for approximately 20-25 minutes until heated thorugh and slightly golden on top.
