Quick And Easy Southwestern Salad |

Served individually or as a group salad. Fast texmex flavors. Ingredients:
1/2 cup chopped yellow onion |
1 lb lean ground beef |
1 tbl chili powder |
2 tsp dry oregano |
1/2 tsp ground cumin |
1 cup canned kidney beans drained and rinsed |
1 15 oz can chickpeas drained and rinsed |
1 tomato diced |
2 cups romaine lettuce (i shread mine) |
1/2 cup cheddar cheese (sharp or extra sharp) |
Directions:
1. Cook ground beef and onions in a large skillet until the beef no longer remains pink. Drain off fat. 2. Stir chili powder, oregano, and cumin into beef mixture and cook for 1 minute. 3. Add beans, chickpeas, and tomatoes. Mix gently to combine. 4. Combine lettuce topped with cheese on 4 individual plates 5. Add 1/2 cup of beef mixture on top of lettuce and cheese. 6. For a group salad add lettuce in a large bowl, top with cheese and lay mixture on top |
