This is a quick and flavorful soup for cold winter days. It is real good served with original Sun Chips.
Ingredients:
2 tbsp. olive oil
1 small onion, chopped
1 clove garlic, minced
1 28 oz. can diced tomatoes
2 15 oz. cans pinto beans, rinsed and drained
1 4 oz, can diced green chiles
2 cups water
1/2 tsp. salt, or to taste
dash of chili powder
dash of cumin
dash of ground coriander
colby jack cheese
sour cream
Directions:
1. Heat oil in a 4 qt. soup pot over medium-high heat. Saute onion and garlic for about 2 minutes, or until onion is tender.
2. Add tomatoes to the pot with water and seasonings. Cook for about 5 minutes or until soup begins to bubble, then reduce heat to medium.
3. Add beans and chiles; cover and cook for an additional 15 minutes.
4. Ladle hot soup into bowls; top with a dollop of sour cream and sprinkle with cheese. Serve.
