Quick And Easy Southwestern Bean Soup |

This is a quick and flavorful soup for cold winter days. It is real good served with original Sun Chips. Ingredients:
2 tbsp. olive oil |
1 small onion, chopped |
1 clove garlic, minced |
1 28 oz. can diced tomatoes |
2 15 oz. cans pinto beans, rinsed and drained |
1 4 oz, can diced green chiles |
2 cups water |
1/2 tsp. salt, or to taste |
dash of chili powder |
dash of cumin |
dash of ground coriander |
colby jack cheese |
sour cream |
Directions:
1. Heat oil in a 4 qt. soup pot over medium-high heat. Saute onion and garlic for about 2 minutes, or until onion is tender. 2. Add tomatoes to the pot with water and seasonings. Cook for about 5 minutes or until soup begins to bubble, then reduce heat to medium. 3. Add beans and chiles; cover and cook for an additional 15 minutes. 4. Ladle hot soup into bowls; top with a dollop of sour cream and sprinkle with cheese. Serve. |
