Quick and Easy Salmon Cakes |

I got this recipe from a friend, who got it from her daughter so I'm not sure where it originated. No matter....it is easy and good. I added some finely chopped onions to the batter and baked them in a 350 degree oven for 30 minutes instead of frying them. They were crispy on the outside and moist on the inside. Ingredients:
1 cup boiling water |
1 (6 ounce) package cornbread stuffing mix |
3 eggs, slightly beaten |
2 (6 ounce) cans salmon |
1/4 cup oil (for frying) |
Directions:
1. Add boiling water to stuffing mix and let stand 5 minutes. 2. Mix eggs and salmon 3. Add stuffing mix. 4. Shape into patties. 5. Cook about 5 minutes on each side until slightly browned. |
