Quick and Easy Rice and Beans |

This is one of my most popular recipes. Very few people even suspect that I don't make it from scratch. I usually double-up on everything. Ingredients:
1 tablespoon extra virgin olive oil |
1 garlic clove, finely chopped |
1 (14 1/2 ounce) can s&w beans (caribbean style black beans) |
1 (14 1/2 ounce) can s&w tomatoes (petite-cut, diced with jalepenos) |
1 cup cooked rice |
Directions:
1. Heat oil, sautee garlic until soft. 2. Add beans and tomatoes. 3. Heat slowly to allow flavors to blend. 4. Bring to high heat and reduce slightly (to about 3/4 original volume). 5. Serve over rice. |
