Quick and Easy Raspberry Chocolate Parfait |

I had some Lite Silken Tofu in the pantry, so I decided to experiment to see what I could do with it. This is delicious, and I don't feel guilty eating it. Ingredients:
12 ounces lite silken tofu |
1 cup sugar |
1 teaspoon vanilla extract |
2 tablespoons cocoa powder |
2 cups fresh raspberries |
Directions:
1. In blender or food processor, combine all ingredients except raspberries, and blend until smooth. Divide raspberries into four individual serving dishes. Spoon tofu mixture on top. Chill until you’re ready to serve. |
