A quick and easy pumkpin soup, just like what grandma used to make. Perfect for lunch on a winter day. Ingredients:
1kg pumpkin |
3 cups water |
2 teaspoons instant chicken stock powder |
2 teaspoons instant green herb stock powder |
2 teaspoons sugar |
1/2 teaspoon grated nutmeg |
2 large onions ( peeled and quartered ) |
2 cloves garlic |
1-2 cups skim milk |
2 teaspoons finely chopped parsley |
Directions:
1. Cut the pumpkin into 6 to 8 pieces, with skin off. 2. Place in a large pot with water, seasoning, onions and garlic. 3. Cover and cook briskly until pumpkin is soft. 4. Puree punpkin, onion etc in a mouli. 5. Thin the puree, with milk, to the thickness you like. 6. Reheat and serve with a little chopped parsley on top. |
