These pop-overs are my version of comfort food. Ingredients:
1 1/4 cups flour |
1/2 teaspoon salt |
2 eggs, beaten |
1/2 cup milk |
3/4 cup milk |
softened butter |
Directions:
1. Mix flour and salt in a medium bowl and make a well in the center. 2. Pour eggs and 1/2 cup milk into the well. 3. Gradually work in flour, whisking until smooth. 4. Whisk in 3/4 cup milk. 5. Cover bowl with plastic wrap and refridgerate for 30 minutes. 6. Heat oven to 450 degrees. 7. Preheat muffin or pop-over pan for 10 minutes. 8. When hot, brush cups with softened butter. 9. Fill cups 2/3 full with pop-over mixture. 10. Bake at 450 degrees for 15 minutes. 11. Reduce heat to 350 degrees and bake 10-15 minutes longer. 12. DO NOT open the oven door until finished baking! 13. Pop-over will deflate if you do. |
