I concocted this Okie version of gumbo & it quickly became a must-have at many a potluck dinner! Ingredients:
1 box zatarain's hoppin' john mix |
1/2 c. chopped onion |
3 t. butter |
2 c. chopped okra (frozen or fresh) |
2 c. chicken leftovers |
2 links bratwurst, in coins |
2 c. chicken broth |
1 can seasoned diced tomatoes (half drained) |
1 1/2 t. minced garlic |
salt & pepper |
2 tsp. parsley flakes |
1 t. creole seasoning (more or less, depending on taste) |
Directions:
1. Prepare rice mix per package directions. 2. While rice is simmering, melt butter in large pot, cook okra and onion until onion softens. 3. Add broth & tomatoes, simmer until rice is done. 4. Season okra pot with garlic, creole, salt, pepper, parsley.. 5. Add rice mix to okra pot, stir well, reduce heat. 6. Add chicken & bratwurst. 7. Let stand about 10 minutes. |
