Quick and Easy Garden Tomatoes |

The original recipe calls for 3 large tomatoes, but I use cherry tomatoes as I have them growing like crazy in my garden and need to use them up. Ingredients:
3 cups cherry tomatoes, cut in half |
2 green onions, thinly sliced |
1/3 cup olive oil |
1/4 cup red wine vinegar |
2 garlic cloves, minced |
1 tablespoon basil, minced |
1 1/2 teaspoons oregano, minced |
3/4 cup feta cheese, crumbled |
1 (2 1/4 ounce) can sliced olives, drained |
Directions:
1. Arrange tomatoes and onions on a serving platter. 2. Whisk the oil, vinegar, garlic, basil and oregano; drizzle over salad. 3. Top with cheese and olives. 4. Chill until serving. |
