Quick And Easy Feta Spread |

Originally from a fresh oregano package. Good with crackers, crusty bread or pita. For a variation, try it with roasted red peppers instead of the tomatoes. Ingredients:
8 ounces feta cheese, crumbled |
3 plum tomatoes, chopped |
3 tablespoons extra virgin olive oil |
1 tablespoon fresh oregano, finely chopped |
fresh ground black pepper, to taste |
Directions:
1. Preheat broiler. 2. Spread feta evenly in a shallow baking dish. 3. Arrange tomatoes across the top of the feta. 4. Drizzle olive oil over tomatoes. 5. Sprinkle oregano and black pepper over the top. 6. Broil mixture 2-3 inches from heat until cheese is bubbling, about 5-8 minutes. |
