Quick And Easy Egg Drop Soup |

This is a great feel good soup when you need a picker upper or feel a little under the weather! Nice and easy and sure to please! Ingredients:
5 cups chicken broth |
1/2 cup sliced green onions |
3 eggs, beaten |
1/4 cup soy sauce |
salt and pepper to taste |
wonton wrappers |
oil(you will need about an inch or so in your pan) |
optional |
you can add a small amount of one or more of the following if you like |
cubed cooked chicken |
chopped water chestnuts |
cooked shrimp |
cooked pork pieces |
Directions:
1. Bring broth to a boil. 2. Season with salt and pepper to taste. 3. Lower heat to med. and slowly stir in egg(slow stream) while whisking with a whisk or fork. 4. Cook 2 to 3 minutes. 5. Stir in green onions and soy sauce. 6. Slice wontons into small strips. 7. Heat oil in separate small saucepan or frying pan. 8. Add wontons a few at a time and cook until lightly browned. 9. Drain on paper towels. 10. Spoon soup into soup bowls. 11. Top with a few wonton strips. 12. Serve with additional soy sauce on side. |
