Quick and Easy Chicken & Feta Pizza |

This came from my Mastercook collection. This is an Athenos recipe. Ingredients:
1 prepared pizza crust (12 dia) |
1 tablespoon olive oil |
1 1/2 cups shredded mozzarella cheese, divided |
6 ounces chopped cooked chicken (leftover grilled is best!) |
1 medium tomato, chopped |
1 (4 ounce) package athenos traditional crumbled feta cheese with dried basil and tomato |
Directions:
1. Place crust on cookie sheet. 2. Spread crust with olive oil. 3. Sprinkle with 3/4 cup of the mozzarella cheese. 4. Top with chicken, tomato and feta cheese. 5. Sprinkle with remaining 3/4 cup mozzarella cheese. 6. Bake at 450 degrees for 10 to 12 minutes or until cheese is melted and crust is golden brown. 7. Let stand 5 minutes. 8. This recipe yields 8 appetizer or 2 to 4 main dish servings. 9. Special Extra: Sprinkle pizza with 1 tablespoon chopped fresh basil. |
