Quick And Easy Black Beans And Rice |

This is a great fast side dish. It is easy but so very good. I really jazzes up brown rice. Ingredients:
1 cup quick brown rice (not instant) |
1 can black beans - drained and rinsed |
1 can tomatoes |
1 teaspoon of cumin |
fresh cilantro to taste |
sour cream to taste - optional |
Directions:
1. Cook rice according to package directions and fluff with a fork. 2. Add Rinsed black beans, canned tomatoes and cumin. (Add the Sour Cream here if using) 3. Stir all together and heat through. Add Cilantro and stir. 4. ++++++++++++++++++++++++++++++++++++++++++++++++++++ 5. You can change this up as you want. I have added fresh minced garlic, onions and corn. When I made it last night I used the canned Roasted tomatoes. You are only limited by your imagination! |
