Quick And Delicious Steak And Spinach Salad |

I wanted a health salad that would be quick to make but delicious, I made this with some ingredients I had in the house and the results were awesome! Ingredients:
1 pound thin sliced sirloin steak, (about 2, sliced into thin slices) |
1 green bell pepper, sliced |
1 large onion, sliced |
2 to 3 cloves garlic, minced |
1 large tomato, seeded and cut into bite size pieces |
1 lb fresh spinach |
salt and cracked black pepper to taste |
3 tablespoons olive oil, divided |
3 to 4 teaspoons butter |
8 oz. sliced mushrooms |
1/4 cup soy sauce |
Directions:
1. Heat a large skillet over med high heat. Drizzle pan with olive oil(about 1 tablespoon) 2. Add onions,mushrooms and bell pepper to pan and cook until just tender and lightly browned 3. Remove from heat and place in a dish until ready to use 4. Heat another tablespoon of the olive oil in skillet. 5. Add steak and cook a few minutes on each side until med well(less if you want it med rare) 6. Return onion mixture to skillet and add soy sauce. 7. Continue to cook for 1 to 2 minutes. 8. Stir in salt and pepper to taste. 9. Remove from heat and place in dish until ready to serve 10. Heat remaining oil in skillet 11. Stir in 1 tablespoon butter 12. Add tomatoes and cook for 2 minutes over med heat 13. Stir in spinach and season with salt and pepper to taste 14. Stir spinach to just wilt a little 15. Remove spinach from pan and divide between two plates 16. Spoon steak salad over spinach mixture and serve |
