This is a light fluffy Quiche that has a little zing and spinach and spice to make your libido sing. Ingredients:
crust |
2 cups flour |
1/2 cup oil |
1/4 cup milk |
1 tsp salt |
filling |
1 cup chopped onion |
2 chopped jalapeno peppers |
4 eggs |
2 cups milk |
3/4 tsp nutmeg |
3/4 cup shredded cheddar cheese |
2 cups fresh baby spinach |
1 tsp fresh ground pepper or to taste |
1 tsp sugar |
Directions:
1. Mix crust ingredients together and press into a deep pie plate. You will probably have leftover crust mix to make a tart or something. Pre-bake 10 minutes at 350 F. 2. Saute chopped onions and jalapenos until lightly caramelized. Spread onion and pepper mix on the bottom of pre-baked crust. Rip spinach leaves and fill about 1/2 full. Sprinkle with nutmeg and shredded cheese. Finish filling pie plate up with spinach. Sprinkle pepper and 1 Tsp sugar. Whisk 4 eggs into 2 cups milk. Pour over spinach pushing leaves down while adding the egg and milk mixture. Bake at 375 F for 10 mins. then 350 F until knife inserted in center comes out clean and crust is brown. Sprinkle lightly with paprika. Let rest 10 mins. before cutting. |
