Quiche Au Gorgonzola/Roquefort |

Very good cheesy - not eggy - quiche. Ingredients:
9 inches frozen pie crusts |
7 ounces gorgonzola |
4 ounces cream cheese, room temp |
2/3 cup heavy cream |
2 eggs, beaten |
1 pinch freshly grated pepper |
1 pinch cayenne pepper |
2 tablespoons minced chives |
4 slices cooked and crumbled bacon (optional) |
Directions:
1. Preheat oven to 400 degrees. 2. Prepare crust (if necessary) and put aside. 3. In a large bowl, combine Gorgonzola, cream cheese and heavy cream. 4. Add the eggs, pepper, cayenne, chives and bacon and combine until well-mixed. 5. Pour into the prepared pie crust and bake for 30 minutes, until center is set. 6. Remove from oven and let rest for at least 5 minutes before serving. 7. Can be served warm, room temp, or cold. |
