Searching for a really nice Quiche I came up with this recipe. Use red and green peppers for a nice look and als your choice of cheese. Use whatever fresh herbs you like, makes a much nicer quiche. Ingredients:
2 uncooked pie shells |
8 eggs |
1 cup sour cream |
2 1/2 cups milk |
3 cups shredded cheddar cheese |
1/2 cup onion, finely minced |
1/2 green pepper, finely minced |
1 cup ham, diced small |
salt and pepper |
1/2 cup fine herbs (your choice of parsley,thyme,chives) |
Directions:
1. Preheat oven to 425. 2. Slightly soften onion and peppers in the microwave for 1 minute. 3. Beat eggs,milk and sour cream until well incorporated. 4. Mix in remaining ingredients and pour into pie shells. 5. I bake them on a cookie sheet in case of spillage. 6. Bake at 425 for 10 minutes then reduce to 325 for 40 - 50 minutes or until set. 7. Cool for 15-20 minutes before serving. |
