Cheesey pasta quiche. Ingredients:
2 c macaroni, uncooked |
6-8 slices bacon, chopped |
2 c american cheese, shredded |
2 c monterey jack cheese, shredded |
2 c soft bread cubes |
1 med onion, chopped fine |
1 sm green bell pepper, chop fine |
4 eggs, separated |
2 c milk |
1 t salt |
6 – 8 drops hot sauce |
red salsa (optional) |
Directions:
1. Preheat oven to 325 degrees. 2. Prepare macaroni according to package directions; drain. 3. In a medium skillet, cook bacon until crisp; drain. 4. In large bowl, combine macaroni, bacon, cheeses, bread cubes, onion and green pepper. 5. In a medium bowl, beat together egg yolks, milk, salt and hot sauce. 6. Add to macaroni mixture; mix well. 7. In a large bowl, beat egg whites until stiff. 8. Fold into macaroni mixture. 9. Pour into buttered 12 in quiche dish or 13x9 in baking dish. 10. Place a shallow baking dish with 1 – 2 inches water on lowest rack of 325 degree oven. 11. Place quiche on center rack. 12. Bake until set and knife inserted in center comes out clean, about 1 hour. 13. Let stand 5 minutes before cutting. 14. Garnish as desired. 15. Serve with salsa. 16. Refrigerate leftover. 17. Makes 10-12 servings. |
