This is from one of my Mexican cook books,these cheese-filled tortillas are the Mexican version of grilled cheese sandwiches.serve them as soon as they are cooked or they will become chewy.try spreading a thin layer of your favorite Mexican salsa on the tortilla before adding the cheese,or add a few pieces of cooked chicken or shrimp before folding the tortilla in half. Ingredients:
7 ounces mexican blend cheese |
1 chile, fresno (optional) |
8 flour tortillas, 6-inch across |
onion relish or salsa, to serve |
Directions:
1. cut off the stem and deseed the chile,cut the flesh into 8 thin strips. 2. warm a large frying pan or griddle.place one tortilla on the pan or griddle at a time,sprinkle cheese on one half and add a strip of chile,fold the tortilla over the cheese and press the edges together gently to seal,cook the filled tortilla for 1 min,then turn over and cook the other side for 1 minute. 3. remove from the pan,cut it into 3 triangles or 4 strips,serve immediately with onion relish or tomato salsa. |
