This comes from the January 2009 issue of recipes + magazine. It's a fast, simple lunch, and is a great source of calcium! Ingredients:
150 g shaved ham, finely chopped |
2 tablespoons sun-dried tomatoes, drained on paper towel and finely chopped |
1/4 cup low-fat tasty cheese, shredded |
2 tablespoons light sour cream |
2 tablespoons low fat cottage cheese |
2 green onions, finely chopped |
4 (20 cm) soft flour tortillas |
cooking spray |
Directions:
1. Preheat a sandwich press. Combine all ingredients (except tortillas and cooking spray) in a medium bowl. 2. Lay two tortillas on a flat surface, and spread each with half of the ham mixture, leaving a 1 cm border. Top each with another tortilla. Spray with oil. Toast in sandwich press for 5 minutes or until golden and crisp. Cut in half and serve. |
