Queen Puff's Vegetable Beef Soup |

This smells so good while it is cooking. I love to let it simmer but there are times I skip the simmering step when in a hurry and it is almost as good. Just the idea of it simmering for hours makes it seem extra special though. You can also use fresh vegetables if they are available, even if it is just to add an onion, potatoes or tomatoes. My family loves this soup and you can't it with a PB & J sandwich-so delicious! Ingredients:
1 lb stew beef chunks or 1 lb ground beef |
15 ounces tomato sauce |
4 (15 ounce) cans veg-all, drained |
15 ounces triple succotash |
11 ounces tomato soup |
15 ounces potatoes, drained |
100 ounces water (approximately) |
2 tablespoons parsley |
2 beef bouillon cubes |
1 teaspoon onion powder |
1/4 teaspoon garlic powder |
1/2 teaspoon ground pepper |
1 teaspoon salt |
1 bay leaf |
8 ounces noodles (i like the multi-colored spirals for a colorful soup) |
Directions:
1. Cut stew beef meat into small pieces and brown in a large pot (or ground beef). 2. Add tomato sauce and then use tomato sauce can to fill 4 cans full of water and add to pot to cover beef. 3. Cook slowly at least 1 hour. 4. Add Veg-all, succotash, tomato soup and potatoes. 5. Using tomato sauce or tomato soup can, fill can with water 4 times and add to pot. 6. Add parsley, beef boullion cubes, onion powder, garlic powder, pepper, salt and bayleaf. 7. Although not listed in ingredients, I also like to add 1 tablespoon of Paula Deen's House Seasoning Mix (Paula Deen's House Seasoning Mix). 8. Simmer 30 minutes. 9. Remove bayleaf. 10. Add noodles and cook 8 to 10 minutes. |
