Queen Of The Carolinas Chowder |

A great fish chowder made with tomatoes, snapper and shrimp, and thickened with starchy potatoes. Ingredients:
1 tsp olive oil |
2 medium white onions, diced |
3 garlic cloves sliced |
28 oz. can diced tomatoes, drained |
3 yukon gold potatoes, peeled and diced |
5 cups fish stock |
1 tsp thyme |
1/4 tsp dried parsley |
2 red snapper fillets, cut in 1” cubes |
1/2 lb medium shrimp, shelled and de-veined |
1/4 tsp red pepper flakes |
1/2 tsp lime juice |
1/2 tsp ground black pepper |
Directions:
1. Cook onions and garlic in olive oil over medium heat, approximately 4 minutes. 2. Add tomatoes and stir, cooking two minutes. 3. Add potatoes, stock, thyme and parsley. 4. Bring to a rapid boil. 5. Reduce heat to medium and cook uncovered 15 minutes. 6. Add fish, shrimp, pepper flakes, lime juice and pepper. Stir well. 7. Cook 5 minutes and serve hot. |
