The cookbook I found this in claims that this is Queen Elizabeth's own cake recipe. Ingredients:
1 cup boiling water |
1 cup dates, chopped |
1 teaspoon baking soda |
1 cup sugar |
4 tablespoons butter, softened |
1 egg, beaten |
1 teaspoon vanilla extract |
1 1/2 cups sifted all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 cup coconut or 1/2 cup chopped pecans |
5 tablespoons light brown sugar |
5 tablespoons cream |
2 tablespoons butter |
1/2 cup coconut or 1/2 cup chopped pecans |
Directions:
1. Preheat the oven to 350°F; grease a 9-inch square cake pan. 2. In a bowl, pour the boiling water over the dates; add the soda and let stand while the remaining ingredients are prepared. 3. Cream together the sugar and butter in a large bowl; add the eggs and vanilla; stir in the coconut, flour, baking powder and salt. 4. Pour in the date mixture and blend well. 5. Pour the batter into the cake pan; bake for 35 minutes or until toothpick inserted in center comes out clean; cool before icing. 6. Combine all the ingredients for the icing; bring to a boil and cook, stirring constantly, for 3 minutes. While the icing is still warm, pour over the cooled cake; sprinkle with coconut. |
