Received this intriguing recipe from AJ on gourmet_recipes_from_around_the_world. I plan to make them when the wet weather clears so I can use the deep fat fryer on the daeck - oh, & have friends over to eat these! Think these will make an outstanding breakfast with strong coffee (& chai tea for the coffee hater) before a day of winter fishing! Thanks AJ! You will need oil for frying that has a high smoke point - we always use pure peanut oil. Ingredients:
2 eggs, beaten |
3/4 cup granulated sugar |
1 tablespoon butter, melted |
2 1/2 cups all-purpose flour |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1 cup dates, chopped |
1 cup milk |
1 teaspoon lemon extract |
Directions:
1. In a bowl, combine beaten eggs, sugar and melted butter; beat well. In another bowl, combine flour with baking powder, salt and nutmeg. Fold in dates. Add dry ingredients to egg mixture alternately with milk and lemon extract. 2. Heat oil in deep-fat fryer to 375°F Drop batter by tablespoonfuls, 2 or 3 at a time, into hot oil and fry until crisp and brown, about 3 minutes frying time, turning once. Drain on paper towels. |
