This recipe comes from an estate sale that I purchased in 1994. I have made this recipe on at least a dozen occasions and it is fantastic. We like it over grilled steak, chicken or pork. Yummers Ingredients:
vegetable cooking spray |
2 pounds sweet onions sliced |
1 small leek white part only thinly sliced |
4 ounces shallots finely chopped |
1/2 cup sliced green onions and tops |
1/2 cup vegetable broth |
1-1/2 teaspoons dried mint leaves |
1/4 teaspoon dried sage leaves |
1/4 teaspoon salt |
1/2 teaspoon white pepper |
Directions:
1. Spray large skillet with cooking spray then heat over medium heat until hot. 2. Sauté onions, leek, shallots and green onions stirring frequently then stir in broth. 3. Heat to boiling then reduce heat and simmer covered 5 minutes then stir in herbs. 4. Cook uncovered over medium low heat until onion mixture is golden about 15 minutes. 5. Season with salt and white pepper then serve immediately. |
