cooking spray |
2 lbs sweet onions, sliced |
1 small leek, thinly sliced (white part only) |
4 ounces shallots, finely chopped |
1/2 cup vegetable stock |
1/2 cup green onion, sliced |
1 -1 1/2 teaspoon dried mint |
1/4 teaspoon dried sage |
salt and pepper |
Directions:
1. Spray large skillet with cooking spray. Heat over medium until hot. 2. Saute onions, leeks, shallots and green onions 3-4 minutes, stirring frequently. 3. Stir in vegetable stock and heat to boiling. 4. Reduce heat and simmer, covered, for 5 minutes. 5. Stir in herbs and cook, uncovered, over medium-low until onion mixture is golden, about 15 minutes. 6. Season to taste with salt and pepper. |
