Mom used the recipe straight off the box of the Quaker Oatmeal canister. This has always been extra special because of the warm thoughts it brings to me of my Aunt Marshee who worked at the Quaker Oatmeal plant as an executive assistant for most of her professional career. Ingredients:
3/4 cup shortening |
1 cup brown sugar |
1/2 cup white sugar |
1 egg |
1/4 cup water |
1 teaspoon vanilla |
3 cups oats, uncooked |
1 cup all-purpose flour |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 teaspoon cinnamon |
1 cup raisins |
1/2-1 cup nuts, chopped |
Directions:
1. Beat together shortening, sugars, egg, water and vanilla until creamy. 2. Add combined remaining ingredients; mix well. 3. Add raisins, nuts or even chocolate chips at the end. 4. Drop by teaspoonfuls onto greased cookie sheets. 5. Bake at 350 degrees for 12-15 minutes. |
