I wanted to try and create a healthier version of the original 1955 Quaker Oats cookie recipe. These came out beautifully. They resemble a mini scone in texture, appearance and taste. I like a meaty cookie vs. a flat cookie. This cookie has a hard exterior and a soft center. Ingredients:
1 cup white flour |
1 cup wheat flour |
1/2 tsp baking powder |
3/4 tsp cinnamon |
1/2 cup unsweetened apple sauce |
1/2 cup crisco |
1 cup brown sugar |
2 eggs |
2/3 cup skim milk |
2 tsp lemon juice |
2 cups old fashioned oats |
1/2 cup chocolate chips |
Directions:
1. Sift first 4 ingredients. Combine lemon juice and milk. Cream shortening, applesauce and sugar; add eggs; beat until smooth. Add dry ingredients in small amounts alternatively with sour milk. Stir in chocolate chips. Drop by spoonful onto lightly greased baking tray. Bake at 350 deg until golden (approx 14 minutes) |
