PYRAMID SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Locke Estate in Seagoville, Texas in 1984. Ingredients:
5 bell peppers |
4 tomatoes diced |
1 cucumber diced |
1 red onion diced |
1 teaspoon salt |
2 tablespoons sunflower oil |
2 tablespoons red wine vinegar |
1 teaspoon parsley |
1/4 pound feta cheese grated |
Directions:
1. Bake peel and seed peppers then cut into small strips and add tomatoes, cucumbers and onion. 2. Add salt, oil and vinegar and mix well. 3. Serve in the shape of a pyramid then top with chopped parsley and feta. |
