Purslane is a common and prolific garden visitor in most parts of the country. It is considered a weed to most Americans but has a surprisingly delicate flavor and packed full of vitamins and antioxidants. Pick young leaves and stems that you are sure have not been sprayed with chemicals. Ingredients:
3 cups purslane leaves |
one recipe basic yogurt dressing (posted in my recipes) |
fresh mint leaves |
olive oil |
Directions:
1. Wash Purslane Leaves well and chop into small pieces. It is not necessary to remove stems. Mix with Yogurt Dressing and chill before serving. 2. To Serv: Garnish with mint leaves and drizzle with Olive Oil. |
