A friend of mine from Panama made this delicious side dish & I was instantly hooked. I like it best when still warm. The beets in this recipe give it a beautiful purple color. Ingredients:
6 potatoes |
4 large carrots |
4 stalks celery |
6 eggs |
2 lemons, juice of |
15 ounces canned beets |
1/2 teaspoon salt |
1/3 cup mayonnaise |
2 teaspoons relish |
Directions:
1. boil potatoes, carrots, celery, and eggs on stove top until potatoes are tender. 2. peel & cut carrots, celery, eggs and potatoes 3. in large mixing bowl add all ingredients, salt to taste, I prefer less salt & mayonaise. 4. serve while warm. |
