I thought this pie was healthy until i analyzed it! Recipe fills two graham crusts, each cut into 8 slices for a serving. Ingredients:
12 oz. silken tofu (1 package, extra firm) |
1/4 cup sugar |
1 c blueberries (frozen) |
1 tsp vanilla |
8 oz cool whip lite |
2 graham cracker crusts |
Directions:
1. Drain water from the tofu using paper towels by slicing it up in 5 or 10 rectangles and letting it rest on a few sheets of paper towels for at LEAST 15 min. (the longer you do this step, the smoother the pie-I do mine for about an hour or two). 2. Add first four ingredients to a food processor and process until smooth. Move to a bowl and fold in the whipped topping. Put all ingredients into a graham crust and chill for an hour. Enjoy |
