Something different but very tasty! Looks beautiful too! And may I say healthy! Looks best with white pasta but whole wheat is fine too! Ingredients:
3 medium beets |
1 head of garlic |
1/2 lb spaghetti or pasta cooked |
1/2 cup fresh grated parmesan cheese |
2 tbs butter, margarine or olive oil |
salt and pepper to taste |
fresh chopped parsley |
Directions:
1. Cook beets and remove skins. 2. Meanwhile roast or bake garlic. 3. Julienne or dice beets. 4. In a sauce pan, with the oil or butter or margarine, warm beets with the peeled squeezed garlic. 5. Add the pasta and heat well ,stirring until mixture is heated and vivid pink. 6. Season to taste and top with the cheese. 7. Sprinkle with parsley if desired. 8. Serves 4. |
