I'm a low carb dieter so I'm always looking for new ways to satisfy my potato craving. I had one lonely turnip and a small onion. Boil them up and you have a perfect mashed potato substitute. Ingredients:
1/2 cup turnips, cooked |
1/4 cup onions |
1 tsp fennel seed |
1 tbsp butter/margarine 50/50 blend |
Directions:
1. Get water boiling in a small pan. 2. Peel and cube 1 turnip. Roughly chop 1 small onion. Add both to the boiling water along with fennel seed. 3. Allow to cook on a light boil for about 15 minutes until the turnip is reasonably tender. 4. Remove and drain well. Puree in food processor with the butter. There you have it. 5.
