PUREE OF BROCCOLI WITH GARLIC This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baker Estate in Sachse Texas in 1987. Ingredients:
1 bunch broccoli |
1 cup water |
1 medium potato peeled and cut into 1 pieces |
2 garlic cloves peeled |
1 teaspoon salt |
1 teaspoon unsalted butter |
1 teaspoon virgin olive oil |
Directions:
1. Separate broccoli into stalks. 2. Using a vegetable peeler remove fibrous outer layer from stems. 3. Cut stalks including florets into 2 lengths. 4. Place broccoli in a large saucepan with water, potatoes, garlic and salt. 5. Bring to a boil and cover then reduce heat to low and boil gently 15 minutes. 6. Place contents of saucepan in bowl of a food processor then add butter and oil. 7. Process mixture until it is very smooth then transfer to serving bowl and serve immediately. |
