Ribs are boiled with garlic and ginger, then marinated in a Chinese-style barbecue sauce. This is from A Hundred Years of Island Cooking , an old cookbook from the Hawaiian Electric Company. Prep time doesn't include marinating overnight. Ingredients:
5 lbs spareribs |
4 garlic cloves, crushed |
1 piece fresh ginger, crushed |
1/2 teaspoon salt |
1 cup sugar |
1 cup soy sauce |
1 cup catsup |
1/3 cup oyster sauce |
Directions:
1. Cut spareribs into 1 1/2-inch pieces. In a large sauce pot, combine spareribs, garlic, ginger and salt. Add water to cover spareribs; bring to a boil, lower heat and simmer 1 1/2 to 2 hours or until spareribs are tender. Drain. 2. Combine remaining ingredients and marinate spareribs in sauce overnight in the refrigerator. 3. Place spareribs on rack of broiler pan and broil 3 inches from heat for 7 to 10 minutes, basting with remaining sauce. Turn and broil for 5 to 7 more minutes. |
