Very unusual, very tasty side dish that compliments seafood, pork and chicken beautifully. Enjoy Ingredients:
1 teaspoon vegetable oil |
1 small white onion chopped |
2 cloves garlic minced |
1 cup pumpkin peeled and cut into 1/2 cubes |
1/4 cup sherry |
1/4 cup vegetable broth |
2 cups cooked black beans |
1/2 teaspoon salt |
1/2 teaspoon cumin |
1/2 teaspoon thyme |
3 green onions sliced |
Directions:
1. In large nonstick frying pan heat oil. 2. Add onion, garlic and pumpkin then sauté until onion have softened. 3. If using canned pumpkin add with sherry and broth and simmer 8 minutes. 4. Add beans, salt, cumin and thyme then continue to simmer until beans are heated through. 5. Garnish with green onions. |
