Pumpkin White Chocolate Cookies |

An adaptation of a TOH recipe. I'm posting here to save the recipe so I don't lose it. Ingredients:
1 cup butter, softened |
1/2 cup sugar |
1/2 cup packed brown sugar |
1 egg |
2 teaspoons vanilla extract |
1 cup pumpkin (not pie filling) |
2 cups all-purpose flour |
3 1/2 teaspoons pumpkin pie spice |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/4 teaspoon salt |
11 ounces white chocolate chips |
Directions:
1. In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, vanilla and pumpkin. Combine dry ingredients; gradually add to the creamed mixture and mix well. Stir in white chocolate chips. 2. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until firm. Remove to wire racks to cool. |
